Maitake in Japanese means "dancing mushroom" because people in ancient times literally danced for joy when they found these mushrooms. Also known as hen of the woods(not chicken of the woods). This beautiful, feathery brain-like mushroom is both a tasty edible and well studied medicinal mushroom. It has an intense flavour that stands well on its own and a delicate texture.

Enjoy sauteed on their own. Add to teas, soups, stews and sauces.
