Cassia Cinnamon Sticks: Organic- The Light Cellar
There are more than 100 varieties of cinnamon, only 2 are cultivated widely. Cassia or 'Chinese' cinnamon, Cinnamomum burmanni, is a variety that has more flavour than the less common Cinnamomum verum, which is slightly sweeter. Cinnamon sticks curled bark comes post-harvest as the inner bark is pressed together in layers to dry, causing the edges to curl.
Add 1-3 sticks to any tea blend, chai or mulled wine. Use as a stir stick in your cocktail, or spice up your pickling recipes.
