Porcini Mushrooms - Light Cellar
The gourmet Porcini mushroom, aka King Bolete or Penny Bun, is at once earthy, nutty and meaty in flavour. They are mycorrhizal, meaning they form a symbiotic relationship with the roots of hardwood trees which also makes them difficult to cultivate and therefore are primarily harvested from the wild. Fresh porcini’s are uncommon to find as they have a high water content and will spoil quickly. Look for strongly aromatic dried porcini’s as a sign of quality.
Soak for 15-20 min. Use soak water for porcini flavour in recipes. Add to rice, stews, pasta, pizza, soups, sauces or sauté with garlic & onions as a side dish or add to an omelette.
