AboutNative to the Mediterranean, Anise seed belongs to the same highly aromatic plant family as dill, caraway, fennel and cilantro.
It has a sweet, fennel-like taste owing to the organic compound anethole and is enjoyed in teas and baking, as well as to balance the flavours of bitter extracts and tinctures. Anethole is only mildly soluble in water, and so is often extracted using alcohol. It has both carmative and expectorant qualities.
In folk medicine, anise is considered a mild expectorant and added to cough medicines. It's been used to mask the taste of bitter drugs. Popular as a digestive aid and breath sweetener. The anethole released when grinding and backing slows decay from fungi and moulds.
