Apricot kernels have a flavor profile similar to almond paste and marzipan, with some sweetness and some bitterness. 

Note: Health Canada would like you to know that Bitter apricot kernels contain amygdalin, a substance that is converted to cyanide by the body and may cause symptoms of poisoning if consumed.  Health Canada does not consider raw and unprocessed bitter apricot kernels to be safe for human consumption. Since 2020 Health Canada has limited the quality of apricot kernels available in Canada and has established a maximum level (ML) of 20 parts per million for total extractable cyanide and any apricot kernels that exceed the ML are not allowed for sale in Canada. Health Canada suggests adults consume no more than 3 kernels a day and to mix them with other food. Children and pregnant women should avoid bitter apricot kernels.
