Masa, the Spanish word for "dough", is the traditional dough used to make corn tortillas.It is made with hominy, or dried corn kernels that have been cooked and soaked in a diluted solution of lime or wood ash in a process called nixtamalization developed in Mesoamerica. This process frees up nutrients bound in the corn's structure making them more absorbable.
Once processed, the wet dough is cooked and dried and then further ground to yield masa harina, the flour commonly used to make tortillas. Blue Corn Masa brings a lovely blue colour and a distinctive taste to baked goods.
It's most commonly used to make tortillas, but it is also featured in other delicious dishes including tamales, pupusas and arepas.
