Story:
Naturally gluten-free with a mild nutty flavour, teff is the staple grain of traditional Ethiopian cooking often used to make a delicious sourdough pancake called injera. Brown teff has an earthy, nutty flavour that works well as a replacement for whole wheat or light rye flour. The word’s smallest grain, its name in Greek, means ‘the grass of love’.centuries.
Instructions:
Use teff flour as a gluten free flour substitute in breads, pancakes, muffins and other baking. Works best in baking when blended with another flour such as oat, quinoa, sorghum or rice. Basic substitution: 3/4 cup teff four, 1/4 cup alternative flour = 1 cup whole wheat flour.
