Known in Japan as gobo — a beloved culinary vegetable — and across European folk traditions as "poor man's potatoes," burdock root has fed and nourished people for centuries before it ever appeared in an apothecary. This humble, food-like root occupies that satisfying space between kitchen ingredient and herbal ally.
Burdock root is naturally rich in inulin fibre, phenolic acids, and lignans — compounds long associated in traditional herbal practice with supporting the body's natural elimination pathways and the health of the skin. In Western herbalism it holds a long-standing reputation as a cleansing and nourishing root, traditionally used to support the liver and digestive system and help the body process and clear accumulated waste. The kind of deep, slow, unglamorous work that good roots tend to do.
A flavourful addition to broths, soups, and stir-fries — its earthy, slightly sweet flavour deepens beautifully with slow cooking.
How to prepare: Add 2–3 tsp per cup of water. Bring to a boil for 3–5 minutes, then reduce heat and simmer for 30 minutes. Strain and enjoy as a tea decoction. Or add root pieces directly to soups, stews, and stir-fries to build a rich, grounding flavour base.
