Whole Irish moss is worlds apart from the highly refined commercial carrageenan extract — this is the real thing, rich in the complex polysaccharides, minerals, and fibre that make it such a beloved ingredient in natural wellness kitchens.

Naturally abundant in iodine, calcium, magnesium, and potassium — minerals that play essential roles throughout the body — as well as dietary fibre and prebiotic-acting compounds that feed the beneficial bacteria in your gut. Its mucilaginous quality has long made it a go-to ingredient in folk traditions for soothing and coating the digestive tract.

A wonderful plant-based alternative to gelatin, and one of nature's most effective natural thickeners.

How to prepare: Rinse well, then soak in cold water for 2 hours. Wash thoroughly to remove any sand or grit. Place 1 cup in a high-speed blender with 2–3 tbsp water and blend until smooth. Use 1–2 tbsp as a thickener, or blend into smoothies, puddings, soups, sauces, and desserts for a creamy, gel-like texture. Can also be simmered directly in water or plant-based milk. Store prepared gel in an airtight container in the fridge.
