Irish Moss - Organic - Light Cellar

Irish Moss, Sea Moss
(Gracilaria)

A mild tasting, mucilaginous, red seaweed that has been used for centuries in Ireland and other Atlantic coastal populations for both its culinary and therapeutic properties. Best known for its excellent gelling quality due to its high content of carrageenan. Not to be confused with the commercial extract of this seaweed., commonly also known as carrageenan. 

Rinse and soak in cold water for 2 hours. Wash thoroughly to remove sand and grit. Place 1 cup in high-speed blender with 2-3 Tbs water. Blend until smooth and gelled. use 1-2Tbsp as a thickener or for creaminess add to puddings, smoothies, soups, sauces, desserts and milk. Store soaked moss in an airtight container in the fridge. Or use by simmering in water or milk.
