A Winter of Mocktail Magic Begins… ❄️✨
As the wheel of the year turns, as the nights grow long and the snow settles softly on rooftops, we at The Light Cellar have been brewing something truly delightful behind the scenes… we’re excited to unveil our Holiday Mocktail Series!
All through December and into January, we’ll be sharing a collection of seasonal mocktails —healthful, nourishing, and delightfully festive. These recipes are designed to carry you through holiday gatherings, fireside evenings, and those slow, reflective moments that winter naturally invites.
Think of these mocktails as little potions of comfort and creativity. Some will be shaken, others stirred, steeped, or gently simmered. Each drink is built with intention—drawing from herbs, tinctures, tonics, house-made syrups, and functional ingredients to offer both flavour and purpose. Think of them as small, joyful potions: uplifting, grounding, nourishing, and always delicious.
And what better way to begin this series than with a winter classic, reimagined the Light Cellar way…
Winter Mocktail #1
Eggnog Hot Chocolate
Creamy, decadent, and deeply nourishing, our Eggnog Hot Chocolate is pure holiday magic in a mug. Crafted with warming spices and creamy goodness, it’s the kind of drink that keeps you nourished from the inside out. Your cozy companion for frosty mornings, slow winter afternoons, or evenings spent curled up with candlelight and a soft blanket.
Recipe

1-1.5 cups hot milk of choice (1 cup will create a more creamy texture, 1.5 cups will be lighter – hot milk preferred, but in a pinch, hot water will do too)

¼ - ⅓ cup eggnog hot chocolate mix

1 heaping tbsp chocolate coconut butter
Optional Add-Ins

1 tbsp Star Anise Hydrosol

1 dropperful Ginger Tincture

2 drops-1 dropperful Chaga Reishi Syrup
Blend everything together until creamy and frothy. Pour into your favourite mug and finish with whipped cream and a dusting of Eggnog Hot Chocolate Mix, if you like. Sip, savour, and enjoy the winter magic.
To elevate this potion even further, we love adding in a few super-herb boosters:

Ginger Tincture – Warming and circulatory, ginger supports the whole system. It’s a reliable ally for digestive upsets—helping ease gas, bloating, nausea, and indigestion as we transition into the colder months.

Star Anise Hydrosol – Antimicrobial, antioxidant-rich, and immune-supportive, with a beautifully aromatic twist. It also offers gentle digestive support, making it a perfect winter companion.

Chaga Reishi Syrup - Antioxidant-rich chaga and calming, immune-supportive reishi meet the comforting sweetness of maple syrup, aged in locally produced rum. Deeply grounding, this syrup carries earthy notes with a maple-rum warmth—perfect for seasonal resilience and cozy cold-weather sipping.
Use all three, use one, or keep your cup classic and simple. However you enjoy it, each sip brings both nourishment and delight.
