Long revered for its medicinal and decorative properties, butterfly pea flower has a vivid blue colour that dramatically transforms into purple with the addition of lemon or other acidic foods. In Bali, it is called ‘bunga telang’, which means clear vision. It is often used as an iced tea with lemon on the side, or used as a natural blue food dye for rice and other foods.

Use: Add 1/4 tsp to water, smoothies, elixirs, yogurt, dressings or desserts. Add lemon or other acid to transform from blue to purple.
