Learn how to craft the most hearty, delicious and nourishing soups, stocks and broths from the Light Cellar head chef himself (this is your chance to get in on some Light Cellar Kitchen secrets!) 

Soup making is an art and a science. There is a lot of nuance that goes into building out an excellent and nourishing soup in terms of process, texture and flavour - and this class is a deep dive into the specifics. 

You will come away from this class with the knowledge, skills & confidence to craft your own hearty, nourishing & delicious soups!

This class will dive into: 

  • Global soup history 101 
    • Where did soup originate, what was it originally made with? With what ingredients have various cultures crafted soup through the ages? You might be surprised..
  • Learn about the different types of soups:
    • Meet consomme, potage, bisque, veloute and more.
  • Can the Canned! 
    • The science behind why canned soups need to go!
  • Culinary Technicalities 
    • A special opportunity to learn the culinary techniques vital to soup crafting like sautéing, caramelizing and maillard reactions. You will also learn how to work with thickening agents and starches, and how to build up layers of flavour. This will also go into the chemistry side of soup crafting! 
  • The Flavour Cross 
    • Internalize the flavour formula to make delicious soups - so you don't need to follow a recipe! Become a yummy soup making pro. 
  • How to incorporate super foods into soup (for a truly super soup!) 
    • Learn what herbs and flavours are great in soup to boost their nutritional profile and bioavailability, and invite in new dimensions of taste and well-being!
